In a medium saucepan, combine the water, sriracha, soy sauce, minced garlic, sugar, and honey.
Bring the mixture to a gentle boil over medium heat, stirring occasionally.
In a small bowl, whisk together the cornstarch and cold water until smooth.
Slowly pour the slurry into the sauce while whisking continuously.
Cook for 2–3 minutes until the sauce thickens into a glossy glaze.
Reduce the heat to low and keep the sauce warm.
Place the diced chicken and cornstarch into a large zip-top bag.
Seal the bag and shake until every piece is evenly coated.
Heat the cooking oil in a large skillet over medium-high heat.
Add the chicken in a single layer and cook for 6–8 minutes, turning occasionally until golden brown and fully cooked.
Pour the prepared sauce over the chicken.
Toss until every piece is evenly coated with the sticky Honey Sriracha Chicken sauce.
Sprinkle with crushed red pepper flakes, sesame seeds, and chopped green onions if desired.
Serve immediately over warm rice with your favorite vegetables.
