Honey Soy Chicken Tray Bake

A simple Honey Soy Chicken Tray Bake with tender chicken thighs and vegetables.

Ingredients
  

  • 1 tbsp cornflour cornstarch
  • 2 tbsp water
  • 1 tbsp freshly minced garlic
  • 1 tsp freshly grated ginger
  • 60 ml ¼ cup light soy sauce
  • 1 tbsp dark soy sauce
  • 60 g ¼ cup honey
  • 1 tbsp rice vinegar
  • ½ tsp black pepper
  • 1 tbsp sesame oil
  • 1 tbsp olive oil or neutral oil
  • 6 boneless chicken thighs
  • 2 red onions sliced
  • 1 bunch broccolini trimmed

To Serve

  • Sesame seeds
  • Fresh chilli optional
  • Coriander sprigs

Instructions
 

  • Preheat oven to 220°C (425°F), or 200°C fan.
  • In a large bowl, whisk cornflour with water until smooth.
  • Add garlic, ginger, soy sauces, honey, vinegar, black pepper, sesame oil, and olive oil. Mix well.
  • Add chicken and coat thoroughly in the marinade.
  • Arrange onion wedges on a baking tray and place chicken on top. Pour remaining sauce over.
  • Bake for 20 minutes.
  • Add broccolini to the tray, toss lightly in sauce, and bake for another 8 minutes.
  • Grill for 2 minutes to caramelize.
  • Finish with sesame seeds, chilli, and coriander.
  • This Honey Soy Chicken Tray Bake is best served hot over rice.

Notes

  • Chicken breast can be used but may require less cooking time
  • Serve with jasmine rice, noodles, or quinoa
  • Add carrots or bell peppers for extra vegetables
