In a small bowl or mason jar, whisk together honey, soy sauce, lime juice, and minced garlic until well combined. Set aside.
If the chicken breasts are uneven in thickness, pound them to about 1/2-inch thick or slice large pieces in half lengthwise.
Pat chicken dry and season both sides with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Add chicken and cook 3–4 minutes per side until golden brown.
Stir the sauce and pour it into the pan with the chicken.
Continue cooking 6–10 minutes, turning occasionally, until chicken is cooked through and the sauce thickens slightly.
Garnish with chopped cilantro or parsley and serve warm.
