In a medium bowl, whisk together the honey, soy sauce, garlic, and ginger until well combined.
Divide the sauce mixture in half. One portion will be used as a marinade and the other for cooking.
Place the shrimp in a large sealable bag or container and pour half of the sauce mixture over the shrimp.
Toss the shrimp to coat and let it marinate in the refrigerator for 15 minutes, or up to 8–12 hours.
Heat olive oil in a large skillet over medium-high heat.
Add the marinated shrimp to the skillet and discard the used marinade.
Cook shrimp for about 45 seconds on one side until they begin turning pink, then flip them over.
Pour in the reserved honey garlic sauce and cook for another 1–2 minutes until the shrimp are fully cooked and coated in the sauce.
Serve the Honey Garlic Shrimp immediately with the sauce and garnish with chopped green onions.
