Honey Garlic Chicken Bowls

Honey garlic chicken bowls are made with crispy baked chicken tossed in a sweet garlic sauce.

Ingredients
  

For the Chicken

  • 1 lb chicken breast
  • 3 eggs
  • 2 cups panko breadcrumbs

For the Sauce

  • 1/2 cup honey
  • 3 tsp minced garlic
  • 3 tbsp soy sauce
  • 1 tbsp water
  • 1/4 tsp ginger
  • 2 tbsp tapioca or corn starch
  • 2/3 cup water

For the Broccoli

  • 1 to 1 1/2 lbs fresh broccoli
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp minced garlic
  • Pepper to taste
  • Lemon zest optional

For Serving

  • 2 cups rice
  • Sesame seeds or green onions optional

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Cut chicken into bite-sized pieces. Dip each piece into beaten eggs, then coat with panko breadcrumbs.
  • Place chicken on lined baking sheets. Bake the first tray for 10 minutes until golden and fully cooked.
  • While baking, prepare broccoli by tossing florets with olive oil, salt, pepper, garlic, and lemon zest.
  • Remove the first tray of chicken, add broccoli to the oven, then after 5 minutes add the second tray of chicken.
  • Cook rice according to package instructions.
  • To make the sauce, combine honey, garlic, soy sauce, water, and ginger in a saucepan over medium heat.
  • Mix starch with water separately, then add to the sauce. Stir until thickened (2–3 minutes).
  • Toss baked chicken in the sauce until fully coated.
  • Assemble your honey garlic chicken bowls with rice, broccoli, and saucy chicken.

Notes

  • Swap broccoli with green beans or bell peppers.
