Heat olive oil in a large skillet over medium-high heat.
Season the chicken lightly with salt and black pepper.
Add the chicken to the hot skillet in a single layer.
Cook for 3–4 minutes until lightly browned on one side.
While the chicken cooks, prepare the sauce.
In a small bowl, whisk together honey, soy sauce, garlic, and red pepper flakes.
Turn the chicken pieces over.
Pour the honey garlic sauce into the skillet.
Toss the chicken until evenly coated.
Continue cooking for 4–5 minutes until the chicken is fully cooked and the sauce slightly thickens.
Remove from heat.
Serve the Honey Garlic Chicken over rice.
Garnish with green onions, sesame seeds, chopped peanuts, and a squeeze of fresh lime juice if desired.
