Ingredients

For the Chicken Wings

  • 3½ –4 pounds halal-certified chicken wings tips removed and drumettes and flats separated
  • 1½ teaspoons salt
  • 1½ teaspoons freshly ground black pepper
  • 1½ teaspoons hot chili powder
  • 1½ teaspoons smoked paprika
  • 1½ teaspoons garlic powder

For the Honey BBQ Sauce

  • ¼ cup unsalted butter
  • 1 cup halal-suitable alcohol-free BBQ sauce
  • ½ cup honey
  • 2 tablespoons ketchup

Instructions

  • Step 1: Prepare the baking sheet
  • Place an oven-safe wire rack over a large baking sheet lined with parchment paper or aluminum foil.
  • The rack should fit securely inside the baking sheet so the chicken can cook evenly without falling off the edges.
  • If you don't have a wire rack, you can place the wings directly on a lined baking sheet.
  • Step 2: Dry the chicken wings
  • Remove the chicken wings from their packaging and place them on a clean, prepared work surface.
  • Use paper towels to pat the wings thoroughly dry, removing as much surface moisture as possible.
  • Do not wash or soak raw chicken in water, vinegar, or lemon juice. Washing poultry can spread bacteria through splashing, and cooking the chicken thoroughly is what makes it safe to eat.
  • Discard the used paper towels immediately and wash your hands and any surfaces that came into contact with the raw chicken.
  • Step 3: Refrigerate for extra crispiness
  • Arrange the dried chicken wings in a single layer on the wire rack.
  • Place the baking sheet in the refrigerator, uncovered, for approximately 1 hour.
  • For even better results, refrigerate overnight.
  • Turn the wings halfway through the drying period if convenient.
  • This optional step helps remove additional surface moisture and encourages a better texture during baking.
  • If you're short on time, simply pat the wings thoroughly dry and continue with the recipe.
  • Step 4: Preheat the oven
  • Preheat your oven to 425°F (220°C).
  • Prepare a large baking sheet with parchment paper or a silicone baking mat.
  • If using an oven-safe wire rack, position it over the prepared baking sheet.
  • Step 5: Prepare the seasoning blend
  • In a small bowl, combine the salt, freshly ground black pepper, hot chili powder, smoked paprika, and garlic powder.
  • Stir until the seasonings are evenly mixed.
  • This simple spice blend gives the wings their savory, smoky flavor before the honey barbecue sauce is added.
  • Step 6: Season the chicken
  • Place the dried chicken wings in a large mixing bowl.
  • Sprinkle approximately one-third of the seasoning mixture over the chicken.
  • Toss gently using a clean spoon or tongs.
  • Continue adding the remaining seasoning mixture in portions, tossing between additions until every wing is evenly coated.
  • Adding the seasoning gradually helps distribute the spices more evenly.
  • Step 7: Arrange the wings
  • Place the seasoned wings on the prepared baking sheet in a single layer.
  • Leave a little space between the pieces whenever possible.
  • Avoid overcrowding the pan, as this can trap steam and prevent the wings from developing a golden exterior.
  • Use two baking sheets if necessary.
  • Step 8: Bake the first side
  • Transfer the baking sheet to the preheated oven.
  • Bake the wings for 20 minutes.
  • During this time, the chicken will begin releasing some of its natural fat while the seasoning develops a fragrant, savory coating.
  • Step 9: Flip and continue baking
  • Carefully remove the baking sheet from the oven.
  • Using tongs, turn each wing over.
  • Return the wings to the oven and bake for another 25 minutes.
  • The chicken should become golden and cooked through.
  • The thickest part of each wing must reach an internal temperature of at least 165°F (74°C).
  • While the wings are baking, prepare the honey BBQ sauce.
  • Step 10: Melt the butter
  • Place a medium saucepan over medium heat.
  • Add the unsalted butter and allow it to melt completely.
  • Stir occasionally to prevent the butter from browning too quickly.
  • Step 11: Prepare the honey BBQ sauce
  • Add the alcohol-free BBQ sauce, honey, and ketchup to the melted butter.
  • Whisk until the ingredients are smooth and evenly combined.
  • The sauce should have a rich reddish-brown color and a glossy appearance.
  • Step 12: Simmer the sauce
  • Allow the sauce to come to a gentle simmer.
  • Reduce the heat to low and continue simmering for approximately 10–15 minutes, stirring occasionally.
  • The sauce will become slightly thicker as the flavors blend.
  • Avoid boiling it aggressively, as the honey can scorch.
  • Step 13: Coat the chicken wings
  • When the wings have finished their initial baking time, carefully transfer them to a large, clean mixing bowl.
  • Pour the warm honey BBQ sauce over the chicken.
  • Using clean tongs or a clean wooden spoon, gently toss until every wing is thoroughly coated.
  • The sauce should cling to the chicken and create an even, glossy layer.
  • Step 14: Return the wings to the oven
  • If the baking sheet has accumulated excess grease or burnt seasoning, carefully replace the lining with fresh parchment paper.
  • Arrange the coated wings in a single layer on the prepared baking sheet.
  • Return them to the oven and bake for another 7–8 minutes.
  • The sauce should begin bubbling and caramelizing around the chicken.
  • Keep an eye on the wings during the final minutes because the honey can darken quickly.
  • Step 15: Rest and serve
  • Remove the baking sheet from the oven.
  • Allow the wings to rest for approximately 5 minutes.
  • This gives the hot glaze time to settle and cling to the chicken.
  • Transfer your Honey BBQ Chicken Wings to a serving platter and serve warm with your favorite side dishes or dipping sauces.

Notes

For a milder version: Reduce the hot chili powder and use a mild barbecue sauce.
For a spicier version: Add cayenne pepper, chili flakes, or halal-friendly hot sauce to the glaze.
For extra smoky flavor: Add a small pinch of additional smoked paprika to the sauce.
For a thicker glaze: Simmer the sauce for a few additional minutes over low heat, stirring frequently.
