Homemade Strawberry Shortcake is a classic dessert made with fresh strawberries, fluffy biscuits, and whipped cream.

Ingredients
  

Strawberries + Whipped Cream

  • 6 –7 cups quartered strawberries
  • 1/4 cup + 2 Tablespoons granulated sugar divided
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy cream

Biscuits

  • 2 and 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup unsalted butter cold and cubed
  • 1 cup cold buttermilk
  • 2 Tablespoons heavy cream or buttermilk
  • Coarse sugar for sprinkling

Instructions
 

  • In a bowl, mix strawberries with 1/4 cup sugar. Cover and refrigerate to release juices.
  • Preheat oven to 400°F (204°C).
  • Combine flour, sugar, baking powder, baking soda, and salt.
  • Cut in cold butter until crumbly.
  • Add buttermilk and mix gently until a shaggy dough forms.
  • Transfer dough to a floured surface and fold several times to create layers.
  • Flatten and cut into biscuit rounds.
  • Place biscuits close together on a baking sheet.
  • Brush with cream and sprinkle sugar on top.
  • Bake for 18–22 minutes until golden.
  • Whip cream with sugar and vanilla until soft peaks form.
  • Slice biscuits and layer with strawberries and whipped cream to assemble your Homemade Strawberry Shortcake.

Notes

  • You can add a touch of lemon zest to the strawberries
