Warm the milk until slightly warm, not hot.
Add sugar and yeast to the milk. Stir gently and allow it to sit for 8–9 minutes until frothy.
In a large bowl, combine flour, activated yeast mixture, egg, melted butter, and salt.
Mix until a rough dough forms.
Knead for 8–10 minutes until smooth and elastic.
Transfer the dough to a lightly greased bowl. Cover and let rise for about 1 hour or until doubled in size.
While the dough rises, prepare the filling by combining spinach, mozzarella, dried herbs, garlic powder, white pepper, salt, and cream cheese if using.
Punch down the risen dough and divide into 10–12 equal portions.
Flatten each portion into a small round disc.
Add a spoonful of filling to the center.
Carefully seal the edges and shape into smooth balls.
Place the rolls seam-side down on a parchment-lined baking tray.
Cover and allow to rise again for 20–30 minutes.
Brush the tops with melted butter.
Bake at 350°F (180°C) for 18–22 minutes or until golden brown.
Brush with additional butter immediately after baking.
Serve the Homemade Bread Rolls warm.
