High Protein Scrambled Eggs

High Protein Scrambled Eggs are made with eggs and cottage cheese.

Ingredients
  

  • 4 large eggs
  • 1/2 cup 2% cottage cheese
  • 1/8 teaspoon kosher salt
  • Fresh ground black pepper
  • Olive oil spray

Instructions
 

  • In a medium bowl, whisk the eggs, cottage cheese, salt, and black pepper until well combined.
  • Heat a nonstick skillet over medium-low heat and lightly spray with olive oil.
  • Pour the egg mixture into the pan.
  • As the eggs begin to set, gently push them toward the center using a rubber spatula.
  • Continue folding slowly to create soft, fluffy curds.
  • Cook for about 1 ½ to 2 minutes until just set and creamy.
  • Serve immediately and enjoy your High Protein Scrambled Eggs.

Notes

  • Serve with toast, avocado, or fresh vegetables.
  • Add spinach or mushrooms for extra nutrients.
  • Sprinkle cheese on top for added flavor.
