Preheat the Oven
Preheat oven to 425°F (218°C). This recipe makes 8 High Protein Bagel Bites total, 4 per serving.
Combine Dry Ingredients
In a medium bowl, mix vital wheat gluten, flour, salt, and baking powder. Add optional seasonings like garlic powder or onion powder if desired.
Add Wet Ingredients
Stir in apple cider vinegar and water. Mix until a sticky dough ball forms.
Divide the Dough
Divide the dough evenly into 8 balls.
Fill the Bagel Bites
Flatten each ball into a 4–5 inch circle. Place about 2 teaspoons (10g) vegan cream cheese in the center. Fold edges over the filling, pinch to seal, and roll into a smooth ball.
Season
Roll each ball in everything bagel seasoning and place on a lined baking sheet.
Bake
Bake for 20 minutes or until golden brown and firm.
Cool
Let cool for 10 minutes before serving. The centers will be hot.
