Heavenly Honey Lime Chicken & Avocado Rice Stack

Sweet honey-lime chicken layered with fresh avocado and coriander rice.

Ingredients
  

For the chicken

  • 1 lb boneless skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • Oil for cooking

For the rice

  • 1 cup cooked rice white or brown
  • ¼ cup fresh coriander chopped
  • 1 tablespoon lime juice
  • Salt to taste

For the avocado

  • 2 ripe avocados sliced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions
 

  • Season chicken breasts with salt and pepper on both sides.
  • In a small bowl, whisk honey, lime juice, lime zest, and garlic to make the glaze.
  • Heat oil in a frying pan over medium-high heat. Cook chicken for 6–7 minutes per side until golden and cooked through.
  • During the last 2 minutes, brush with glaze, letting it caramelize. Rest 5 minutes, then slice.
  • Mix rice with coriander, lime juice, and salt.
  • Toss avocado slices gently with lime juice, salt, and pepper.
  • Assemble the Honey Lime Chicken & Avocado Rice Stack using a ring mold: rice first, avocado next, then chicken. Remove mold carefully and drizzle with remaining glaze. Serve immediately.

Notes

  • Swap coriander with parsley if preferred
  • Serve with a side salad or grilled vegetables
  • Best enjoyed fresh for ideal texture
