Season chicken breasts with salt and pepper on both sides.

Heat oil in a frying pan over medium-high heat. Cook chicken for 6–7 minutes per side until golden and cooked through.
During the last 2 minutes, brush with glaze, letting it caramelize. Rest 5 minutes, then slice.
Mix rice with coriander, lime juice, and salt.
Toss avocado slices gently with lime juice, salt, and pepper.
Assemble the Honey Lime Chicken & Avocado Rice Stack using a ring mold: rice first, avocado next, then chicken. Remove mold carefully and drizzle with remaining glaze. Serve immediately.
