Ingredients

  • 2 roasted sweet potatoes skin on
  • Extra virgin olive oil
  • 4 eggs
  • Kosher salt
  • Black pepper
  • 2 tablespoons crumbled feta cheese
  • Za'atar
  • Urfa Biber or Aleppo pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  • Slice each roasted sweet potato in half lengthwise.
  • Heat about 1 tablespoon of extra virgin olive oil in a medium nonstick skillet over medium heat.
  • Place the sweet potatoes cut-side down and cook for about 3 minutes until warmed through and lightly caramelized.
  • Transfer them to serving plates with the cut side facing up.
  • Carefully cut a shallow pocket into the center of each sweet potato without cutting through the skin.
  • Season lightly with salt and black pepper.
  • In the same skillet, add a little more olive oil if needed.
  • Crack in the eggs and fry until the whites are fully set while the yolks remain cooked to your preference, about 3 minutes.
  • Season the eggs with a pinch of salt and pepper.
  • Place one fried egg inside each prepared sweet potato. This Sweet Potato Breakfast with Fried Eggs comes together beautifully with simple ingredients.
  • Sprinkle with crumbled feta, za'atar, Urfa Biber (or Aleppo pepper), and fresh parsley.
  • Serve immediately while warm.

Notes

  • Leftover roasted sweet potatoes work perfectly.
  • Fresh herbs such as dill or chives also pair wonderfully.
  • Serve alongside fresh fruit or a simple green salad for a complete brunch.
  • Adjust the spice level by increasing or reducing the Aleppo pepper.
