Healthy Sourdough Discard Kolaches
Soft sourdough discard kolaches with creamy filling.

For the Dough:

For the Cream Cheese Filling:

cream cheese

For the Streusel Topping:

+ 1 tsp sugar

butter

Instructions
Step 1: Prepare Dough
Mix flour and salt in a stand mixer bowl.
In another bowl, whisk milk, butter, sugar, egg, and egg yolk.
Stir in sourdough discard.
Gradually combine wet and dry ingredients.
Knead for 8–10 minutes until smooth.
Let rise 1 hour, then refrigerate overnight.
Step 2: Make Filling
Beat cream cheese, sugar, flour, vanilla, and salt until smooth.
Add lemon juice and adjust to taste.
Chill until ready to use.
Step 3: Make Streusel
Mix flour, sugar, and butter until crumbly.
Chill until needed.
Step 4: Shape Dough
Divide dough into 9 pieces and shape into balls.
Place on baking sheet and let rise 2–3 hours.
Step 5: Assemble
Preheat oven to 350°F (175°C).
Press centers to form indentations.
Fill with cream cheese mixture.
Brush edges with egg wash and add streusel.
Step 6: Bake
Bake 20–25 minutes until golden brown.
Cool slightly and serve.
