Healthy Sourdough Discard Kolaches

Soft sourdough discard kolaches with creamy filling.

Ingredients
  

For the Dough:

  • 3 tbsp white sugar
  • 3/4 cup whole grain spelt flour
  • 1/4 cup sourdough discard
  • 1/2 cup milk warmed
  • 1 cup all-purpose einkorn flour
  • 1 large egg
  • 5 tbsp unsalted butter melted
  • 1 egg yolk
  • 1 tsp sea salt

For the Cream Cheese Filling:

  • 6 oz cream cheese
  • 1/4 tsp vanilla extract
  • 1 –2 tsp lemon juice
  • 1/4 cup white sugar
  • 1 1/2 tsp flour
  • Pinch of salt

For the Streusel Topping:

  • 1 tbsp + 1 tsp sugar
  • 1/2 tbsp butter chilled
  • 1 tbsp + 1 tsp flour

Instructions
 

Step 1: Prepare Dough

  • Mix flour and salt in a stand mixer bowl.
  • In another bowl, whisk milk, butter, sugar, egg, and egg yolk.
  • Stir in sourdough discard.
  • Gradually combine wet and dry ingredients.
  • Knead for 8–10 minutes until smooth.
  • Let rise 1 hour, then refrigerate overnight.

Step 2: Make Filling

  • Beat cream cheese, sugar, flour, vanilla, and salt until smooth.
  • Add lemon juice and adjust to taste.
  • Chill until ready to use.

Step 3: Make Streusel

  • Mix flour, sugar, and butter until crumbly.
  • Chill until needed.

Step 4: Shape Dough

  • Divide dough into 9 pieces and shape into balls.
  • Place on baking sheet and let rise 2–3 hours.

Step 5: Assemble

  • Preheat oven to 350°F (175°C).
  • Press centers to form indentations.
  • Fill with cream cheese mixture.
  • Brush edges with egg wash and add streusel.

Step 6: Bake

  • Bake 20–25 minutes until golden brown.
  • Cool slightly and serve.
  • These Healthy Sourdough Discard Kolaches should be soft, lightly sweet, and perfectly golden.
