Healthy Rice Cooker Garlic Shrimp

A quick and healthy rice cooker garlic shrimp recipe made in one pot.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 tablespoon non-alcoholic cooking vinegar instead of sherry
  • 1 teaspoon paprika
  • 6 cloves garlic minced
  • Kosher salt
  • Black pepper
  • 1 pound peeled and deveined jumbo shrimp
  • 6 ounces halal beef chorizo chopped
  • 1 red bell pepper finely chopped
  • 1 small onion thinly sliced
  • 2 cups long-grain rice
  • Pinch crushed red pepper flakes
  • 1 cup fresh parsley finely chopped
  • Juice of 1/2 lemon
  • Lemon slices for serving

Instructions
 

  • In a bowl, whisk together olive oil, vinegar, paprika, garlic, salt, and pepper. Add shrimp and mix well. Set aside.
  • Add beef chorizo to the rice cooker, followed by red bell pepper and onion.
  • Add rice, red pepper flakes, salt, and black pepper.
  • Pour in 3 cups of water.
  • Place the shrimp mixture on top, including all the garlic oil.
  • Close the lid and cook according to your rice cooker settings (about 30–35 minutes).
  • If needed, remove shrimp after 30 minutes and let rice finish cooking.
  • Stir in parsley and lemon juice into the rice.
  • Serve rice topped with shrimp and garnish with extra parsley and lemon slices.
