In a bowl, whisk together olive oil, vinegar, paprika, garlic, salt, and pepper. Add shrimp and mix well. Set aside.
Add beef chorizo to the rice cooker, followed by red bell pepper and onion.
Add rice, red pepper flakes, salt, and black pepper.
Pour in 3 cups of water.
Place the shrimp mixture on top, including all the garlic oil.
Close the lid and cook according to your rice cooker settings (about 30–35 minutes).
If needed, remove shrimp after 30 minutes and let rice finish cooking.
Stir in parsley and lemon juice into the rice.
Serve rice topped with shrimp and garnish with extra parsley and lemon slices.
