Peanut Butter Maca Overnight Oats are a healthy make-ahead breakfast with rolled oats, almond milk, maca powder, banana, and peanut butter.

Ingredients
  

  • 1 cup almond milk
  • 1 cup rolled oats
  • 1 teaspoon maca powder
  • 1 tablespoon pure maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • 1 banana sliced
  • 1 tablespoon peanut butter
  • Chopped peanuts optional
  • Melted dark chocolate optional

Instructions
 

  • Gather and measure all of your ingredients.
  • Add the rolled oats to a bowl or mason jar.
  • Pour in the almond milk.
  • Stir in the maca powder, maple syrup, and vanilla extract until well combined.
  • Taste and add a little more maple syrup if you prefer a sweeter breakfast.
  • Cover tightly with a lid or plastic wrap.
  • Refrigerate for at least 1 hour, preferably overnight, so the oats soften and absorb the liquid.
  • Before serving, stir the Peanut Butter Maca Overnight Oats and top with sliced banana and peanut butter.
  • Finish with chopped peanuts and a drizzle of melted dark chocolate if desired.
  • Serve chilled and enjoy.

Notes

  • Use crunchy or creamy peanut butter according to your preference.
  • Honey can replace maple syrup if desired.
  • Add protein powder for a higher-protein breakfast.
  • Fresh fruit such as strawberries or blueberries also pairs beautifully with this recipe.
