Ingredients

Greek Chicken Marinade

  • 1.5 lbs chicken breasts
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 3 teaspoons minced garlic
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Tzatziki Sauce

  • 1 1/4 cups plain Greek yogurt
  • 1/2 cucumber finely diced and excess moisture squeezed out
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon juice
  • 2 teaspoons dried dill
  • 1 teaspoon salt

For the Bowls

  • 4 cups cooked rice or quinoa
  • 4 cups shredded romaine lettuce
  • 2 cups grape tomatoes halved
  • 2 cups cucumber peeled and diced
  • 1 cup crumbled feta cheese
  • 1/2 cup diced red onion optional
  • Halal-certified Italian dressing as desired

Instructions

  • Place the chicken breasts in a large resealable bag or covered container. Add the olive oil, lemon juice, garlic, oregano, salt, and black pepper. Seal and gently toss until the chicken is evenly coated.
  • Refrigerate the chicken for at least 30–60 minutes to allow the marinade to develop its bright Mediterranean flavor.
  • While the chicken marinates, prepare the tzatziki. Combine the Greek yogurt, diced cucumber, garlic, lemon juice, dill, and salt in a bowl. Stir until creamy and well combined, then refrigerate until serving.
  • Heat a large skillet over medium to medium-high heat. Add a small amount of olive oil if needed, followed by the marinated chicken. Cook until browned, completely cooked through, and the thickest portion reaches an internal temperature of 165°F (74°C).
  • Let the chicken rest briefly before slicing it into strips or bite-sized pieces.
  • To assemble your Healthy Greek Chicken Bowls with Tzatziki, divide the cooked rice or quinoa among four bowls.
  • Add sliced chicken, romaine lettuce, tomatoes, diced cucumber, feta, and optional red onion to each bowl.
  • Spoon the chilled tzatziki over the top and finish with a little halal-certified Italian dressing. Serve immediately.

Notes

For a lighter bowl, increase the lettuce and vegetables while reducing the amount of rice. For an especially filling meal, use quinoa or brown rice and add extra chicken.
The homemade tzatziki can also be served on the side, allowing everyone to customize their bowl. Warm pita bread makes a delicious accompaniment.
