Ingredients

Cookie Dough

  • 1½ cups almond flour
  • ¼ cup cashew butter or peanut butter
  • ¼ cup pure maple syrup
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup chocolate chips

Chocolate Topping

  • 1 cup chocolate chips
  • 1 teaspoon coconut oil
  • Flaky sea salt optional

Instructions

  • Step 1: Make the Cookie Dough
  • In a large mixing bowl, combine the almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt.
  • Mix until the ingredients come together into a soft, evenly combined cookie dough.
  • Fold in the chocolate chips until evenly distributed.
  • Step 2: Shape the Bark
  • Line a cutting board, baking tray, or large plate with parchment paper.
  • Transfer the cookie dough onto the parchment paper.
  • Using a silicone spatula or clean hands, firmly press the dough into an even rectangle about ½ inch thick.
  • Step 3: Prepare the Chocolate Topping
  • Place the chocolate chips and coconut oil into a microwave-safe bowl.
  • Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely smooth and melted.
  • Step 4: Assemble the Bark
  • Pour the melted chocolate over the cookie dough layer.
  • Use an offset spatula or the back of a spoon to spread the chocolate evenly over the surface.
  • If desired, sprinkle the top with flaky sea salt for a delicious sweet-and-salty finish.
  • Step 5: Chill and Serve
  • Place the bark in the freezer for about 10 minutes or until the chocolate has completely set.
  • Remove from the freezer and cut or break into large pieces.
  • Serve immediately or store chilled until ready to enjoy.

Notes

  • Peanut butter or almond butter can be substituted for cashew butter.
  • Honey may be used instead of maple syrup if preferred.
  • White chocolate or dark chocolate both work beautifully for the topping.
  • Add shredded coconut, chopped pecans, walnuts, or almonds for extra texture.
  • Sprinkle crushed freeze-dried raspberries on top for a colorful finish.
