Chocolate Strawberry Energy Bites are a quick no-bake snack made with oats, peanut butter, flaxseed, strawberries, and chocolate chips.

Ingredients
  

  • 1 cup whole grain rolled oats
  • ½ cup crunchy peanut butter
  • cup whole ground flaxseed meal
  • ¼ cup honey
  • 1 tablespoon water
  • cup freeze-dried strawberries crumbled
  • cup semi-sweet chocolate chips

Instructions
 

  • In a large mixing bowl, combine the rolled oats, peanut butter, flaxseed meal, honey, and water.
  • Stir until the mixture is evenly combined and begins to hold together.
  • Gently fold in the crumbled freeze-dried strawberries and chocolate chips.
  • Cover the bowl and refrigerate for 30 minutes to firm up the mixture.
  • Remove from the refrigerator.
  • Using clean hands or a small cookie scoop, roll the mixture into approximately 1-inch balls.
  • Arrange the Chocolate Strawberry Energy Bites on a plate or airtight container.
  • Serve immediately or store for later enjoyment.

  • Freeze-dried strawberries provide concentrated strawberry flavor without adding excess moisture.
