Ingredients
  

  • 1 cup quick cooking rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 1 large egg
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup sugar-free dark chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line two baking sheets with parchment paper.
  • In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and kosher salt.
  • Add the honey, egg, melted coconut oil, and vanilla extract.
  • Stir until the mixture is fully combined and forms a cookie dough.
  • Fold in the sugar-free dark chocolate chips.
  • Scoop level tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
  • Bake for 8–10 minutes, or until the edges are lightly golden.
  • Remove from the oven and allow the Healthy Chocolate Chip Oat Cookies to cool on the baking sheet for 3–5 minutes.
  • Transfer the cookies to a wire rack and cool completely before serving.

Notes

  • Certified gluten-free oats can be used for a fully gluten-free version.
  • Maple syrup may be substituted for honey if desired.
  • Mini chocolate chips distribute more evenly throughout the dough.
  • These cookies pair wonderfully with coffee, tea, or a glass of milk.
