- 1/4 cup grated parmesan cheese
- 1/4 cup radicchio shredded
- Fresh lemon juice
- 1/4 cup crushed gluten-free croutons crackers, or cheese crisps
- Butter lettuce or romaine lettuce cups
In a large bowl, combine the cooked chicken, Caesar dressing, parmesan cheese, shredded radicchio, and a squeeze of fresh lemon juice.
Mix well until everything is evenly coated. Start with less dressing and add more as needed.
Gently layer two lettuce leaves together to create sturdy wraps.
Spoon the chicken mixture into each lettuce cup.
Sprinkle crushed croutons or crisps on top for extra crunch.
