Healthy Chicken Caesar Lettuce Wraps are made with cooked chicken, Caesar dressing, and crisp lettuce.

Ingredients
  

  • 3 1/2 cups cooked chicken shredded or chopped
  • 1/2 – 3/4 cup Caesar salad dressing
  • 1/4 cup grated parmesan cheese
  • 1/4 cup radicchio shredded
  • Fresh lemon juice
  • 1/4 cup crushed gluten-free croutons crackers, or cheese crisps
  • Butter lettuce or romaine lettuce cups

Instructions
 

  • In a large bowl, combine the cooked chicken, Caesar dressing, parmesan cheese, shredded radicchio, and a squeeze of fresh lemon juice.
  • Mix well until everything is evenly coated. Start with less dressing and add more as needed.
  • Gently layer two lettuce leaves together to create sturdy wraps.
  • Spoon the chicken mixture into each lettuce cup.
  • Sprinkle crushed croutons or crisps on top for extra crunch.

Notes

  • You can substitute radicchio with red cabbage or omit it entirely.
