¼teaspoonsaltonly if the peanut butter is unsalted
¼cupmaple syrup
1teaspoonvanilla extract
1cupchocolate chips
1teaspooncoconut oil
Instructions
Add the almond flour, natural peanut butter, salt if needed, maple syrup, and vanilla extract to a medium mixing bowl.
Stir until everything is thoroughly combined and a soft, rollable mixture forms.
Scoop portions of the mixture and roll them between your palms to form small, evenly sized balls.
Arrange the peanut butter balls on a parchment-lined tray or plate. Refrigerate for 30 minutes, or until firm.
Place the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second increments, stirring well between each interval, until completely melted and smooth.
Using a fork or dipping tool, carefully lower each chilled ball into the melted chocolate, covering approximately two-thirds of the ball while leaving some of the peanut butter center visible on top. This gives the Healthy Buckeyes Recipe its classic buckeye appearance.
Lift each ball from the chocolate, allow the excess coating to drip off, and return it to the lined tray.
Repeat until all of the healthy peanut butter balls have been dipped.
Refrigerate for at least 15 minutes, or until the chocolate coating is completely set.
Keep chilled until ready to serve.
Notes
For a slightly deeper flavor, use dark chocolate chips instead of semi-sweet chocolate.
