Blueberry Lemon Frozen Yogurt Bark is a healthy frozen dessert made with creamy Greek yogurt, fresh blueberries, honey, and lemon zest.

Ingredients
  

  • 2 cups nonfat plain Greek yogurt
  • 3 tablespoons honey
  • ½ teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 teaspoon lemon zest
  • 3 graham cracker sheets broken into small pieces

Instructions
 

  • Line a rimmed baking sheet or tray with parchment paper.
  • In a medium bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth and well combined. Taste and add a little more honey if you prefer a sweeter dessert. For an extra citrus flavor, stir in a small squeeze of fresh lemon juice.
  • Spread the yogurt mixture evenly onto the prepared baking sheet, about ¼-inch thick, forming a rectangle.
  • Sprinkle the blueberries evenly across the surface. Add the lemon zest and scatter the graham cracker pieces over the top.
  • Freeze the Blueberry Lemon Frozen Yogurt Bark for 3 to 4 hours, or until completely firm.
  • Remove from the freezer and cut or break into 16–20 pieces.
  • Serve immediately or return any leftovers to the freezer.

Notes

  • For extra lemon flavor, add 1–2 teaspoons of fresh lemon juice.
  • Mini chocolate chips make a delicious addition.
  • Use gluten-free graham crackers if needed.
