- 2 cups nonfat plain Greek yogurt
- 3 tablespoons honey
- ½ teaspoon vanilla extract
- 1 cup fresh blueberries
- 1 teaspoon lemon zest
- 3 graham cracker sheets broken into small pieces
Line a rimmed baking sheet or tray with parchment paper.
In a medium bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth and well combined. Taste and add a little more honey if you prefer a sweeter dessert. For an extra citrus flavor, stir in a small squeeze of fresh lemon juice.
Spread the yogurt mixture evenly onto the prepared baking sheet, about ¼-inch thick, forming a rectangle.
Sprinkle the blueberries evenly across the surface. Add the lemon zest and scatter the graham cracker pieces over the top.
Freeze the Blueberry Lemon Frozen Yogurt Bark for 3 to 4 hours, or until completely firm.
Remove from the freezer and cut or break into 16–20 pieces.
Serve immediately or return any leftovers to the freezer.
