- 2 ¾ cups old fashioned rolled oats
- 1 ½ tablespoons chia seeds optional
- 1 teaspoon baking powder
- ¼ teaspoon fine salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ⅓ cup maple syrup or honey
- 1 ripe banana mashed or applesauce
- 2 large eggs
- 1 ½ cups milk of choice
- ¼ cup melted unsalted butter or coconut oil
- 2 teaspoons pure vanilla extract
- ¼ cup almonds sliced or chopped
- 1 ½ cups frozen blueberries
Preheat your oven to 375°F (190°C) and grease a baking dish.
In a large bowl, combine all ingredients and mix until well incorporated.
Pour the mixture into the prepared baking dish.
Top with extra blueberries and almonds if desired.
Bake for 30–35 minutes until the center is set.
Let it rest for 10 minutes before serving.
