Healthy Beef and Broccoli

Healthy Beef and Broccoli is a quick stir fry.

Ingredients
  

  • 1 tablespoon olive oil divided
  • 1 ½ lbs flank steak thinly sliced
  • 3 cloves garlic minced
  • 1 shallot finely chopped
  • 4 green onions sliced
  • 4 cups broccoli florets
  • 2 tablespoons arrowroot starch
  • ¾ cup water
  • cup low-sodium soy sauce
  • 2 tablespoons coconut sugar
  • 1 teaspoon fresh ginger minced
  • teaspoon crushed red pepper flakes

Instructions
 

  • Heat half the olive oil in a skillet over medium-high heat.
  • Add beef and cook until browned, about 6–8 minutes. Remove and set aside.
  • In the same pan, add remaining oil, garlic, shallot, and green onions. Cook for 1 minute.
  • Add broccoli, cover, and cook for 5 minutes until tender.
  • In a small bowl, mix water and arrowroot starch until smooth.
  • In another bowl, combine soy sauce, coconut sugar, ginger, and red pepper flakes.
  • Add starch mixture to the sauce and stir well.
  • Pour sauce into the pan and cook until thickened, about 3–5 minutes.
  • Return beef to the pan and toss to coat.
  • Cook for 2–3 more minutes until everything is heated through.
  • Serve your Healthy Beef and Broccoli over rice if desired.

Notes

  • Swap beef with chicken or tofu if preferred.
  • Serve with brown rice, white rice, or noodles.
  • Add carrots or bell peppers for extra vegetables.
