- ⅓ cup Greek yogurt
- ⅓ cup peanut butter
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- ¼ cup dark chocolate chips
- 1 tablespoon extra dark chocolate chips optional, for topping
Preheat the oven to 375°F (190°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
Mash the ripe bananas in a large mixing bowl until smooth.
Stir in the Greek yogurt, peanut butter, and vanilla extract until well combined.
Add the rolled oats and dark chocolate chips, mixing until a thick batter forms.
Spread the mixture evenly into the prepared baking pan, pressing it down firmly with the back of a spoon.
Sprinkle the remaining chocolate chips over the top if desired.
Bake the Banana Oatmeal Bars with Greek Yogurt for 12–15 minutes, or until the center is just set.
Allow the bars to cool completely in the pan.
Lift out using the parchment paper and slice into squares before serving.
- For sweeter bars, use extra-ripe bananas.
- Mini chocolate chips distribute more evenly throughout the batter.
- Top with sliced bananas before baking for a beautiful presentation.
- Enjoy with fresh berries or a drizzle of peanut butter for breakfast.
