Healthy Apple Cake

Healthy Apple Cake is a moist, light dessert made with fresh apples.

Ingredients
  

  • 1.21 lb 550 g apples
  • Juice and zest of 1 lemon
  • 2 large eggs room temperature
  • cup + 2 tablespoons 90 g granulated sugar
  • Pinch of salt
  • 1 cup minus 1 tablespoon 110 g all-purpose flour, sifted
  • 2 teaspoons baking powder
  • ¼ cup + 1 tablespoon 75 ml milk
  • Optional:
  • 1 tablespoon granulated sugar for topping
  • Powdered sugar for dusting

Instructions
 

  • Preheat oven to 356°F (180°C). Grease and flour a 9-inch round cake pan.
  • Peel, core, and thinly slice the apples. Toss with lemon juice to prevent browning.
  • In a large bowl, beat eggs, sugar, lemon zest, and salt until thick and creamy (about 5 minutes).
  • Gently mix in flour, baking powder, and milk until just combined.
  • Fold in two-thirds of the apples.
  • Pour batter into the pan and arrange remaining apple slices on top.
  • Sprinkle with sugar if desired.
  • Bake for 35 minutes or until golden and a toothpick comes out clean.
  • Cool completely and dust with powdered sugar before serving.

Notes

  • You can replace sugar with coconut sugar for a deeper flavor
