Slice the vegetables into very thin rounds (about 1/16 inch thick) using a mandoline slicer for best results.
Place the sliced vegetables in a large bowl. If using, sprinkle with cornstarch and toss to coat evenly.
Add olive oil, salt, black pepper, and smoked paprika. Toss until all slices are lightly coated.
Preheat the air fryer to 320°F (160°C).
Arrange the vegetable slices in a single layer in the air fryer basket (work in batches if needed).
Cook for 10–15 minutes, flipping halfway through, until crispy and lightly browned.
Remove and let cool slightly—they will crisp up even more as they cool.
