Healthy Air Fryer Veggie Chips

Air Fryer Veggie Chips are thinly sliced vegetables cooked until crispy with minimal oil.

Ingredients
  

  • 3 cups sliced vegetables about 400 grams:
  • Large beet red or golden, peeled
  • Large carrot
  • Sweet potato
  • 1 teaspoon cornstarch optional
  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper optional
  • 1 teaspoon smoked paprika optional

Instructions
 

  • Slice the vegetables into very thin rounds (about 1/16 inch thick) using a mandoline slicer for best results.
  • Place the sliced vegetables in a large bowl. If using, sprinkle with cornstarch and toss to coat evenly.
  • Add olive oil, salt, black pepper, and smoked paprika. Toss until all slices are lightly coated.
  • Preheat the air fryer to 320°F (160°C).
  • Arrange the vegetable slices in a single layer in the air fryer basket (work in batches if needed).
  • Cook for 10–15 minutes, flipping halfway through, until crispy and lightly browned.
  • Remove and let cool slightly—they will crisp up even more as they cool.
  • Serve your Air Fryer Veggie Chips immediately for the best texture.

Notes

  • Swap olive oil with avocado oil if preferred.
  • Try zucchini or parsnips for variety.
  • Serve with yogurt dip or hummus for added flavor.
