HEALTHY Air Fryer Chicken and Potatoes

Air Fryer Chicken and Potatoes is an easy one-basket meal.

Ingredients
  

  • 2 medium potatoes diced into 1-inch pieces
  • 2 chicken breasts diced into 1-inch pieces
  • 4 cloves garlic crushed and divided
  • 2 teaspoons smoked paprika divided
  • ½ teaspoon red chili flakes divided (optional)
  • 1 teaspoon fresh thyme optional
  • 1 teaspoon salt divided
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil divided

Instructions
 

  • Preheat the air fryer to 375°F (190°C).
  • In a large mixing bowl, combine the potatoes with 1 crushed garlic clove, 1 teaspoon smoked paprika, half of the chili flakes, ½ teaspoon salt, black pepper, and 1 tablespoon olive oil. Toss until evenly coated.
  • Place the potatoes in the air fryer basket and cook for 10 minutes. Flip halfway through cooking.
  • While the potatoes cook, add the chicken pieces to the same bowl. Mix with the remaining garlic, smoked paprika, chili flakes, salt, thyme, and olive oil until well coated.
  • After the potatoes have cooked for 10 minutes, carefully remove the basket. Push the potatoes to one side and add the seasoned chicken to the other side.
  • Continue cooking the Air Fryer Chicken and Potatoes for another 10 minutes, flipping both the chicken and potatoes halfway through.
  • Check the internal temperature of the chicken using a meat thermometer. It should reach 165°F (75°C).
  • Once fully cooked, remove from the air fryer and serve immediately.

Notes

  • Serve with a fresh green salad or steamed vegetables.
  • Add bell peppers, onions, or zucchini for a complete one-basket meal.
  • Boneless chicken thighs can be used instead of chicken breasts.
  • Fresh lemon juice adds a bright finish just before serving.
  • For meal prep, divide into containers and refrigerate for easy lunches.
