Ground Turkey Taco Quinoa Skillet is a healthy one-pan meal made with lean ground turkey, quinoa, black beans, and taco seasoning.

Ingredients
  

  • 1 cup quinoa cooked
  • ½ yellow onion diced
  • 2 tablespoons olive oil
  • 1 pound lean ground turkey
  • 2 teaspoons taco seasoning
  • 1 clove garlic minced
  • 1 15 oz can black beans, drained and rinsed
  • ½ 14.5 oz can fire roasted tomatoes
  • 4 oz corn kernels
  • ¾ cup shredded cheese
  • Crumbled tortilla chips
  • ½ cup salsa optional
  • Avocado optional
  • Fresh cilantro optional

Instructions
 

  • Cook the quinoa according to package instructions and set aside.
  • Dice the yellow onion and prepare the remaining ingredients.
  • Heat olive oil in a large nonstick skillet over medium heat.
  • Add the diced onion, ground turkey, taco seasoning, and minced garlic to the skillet.
  • Cook while stirring until the turkey is fully browned and cooked through.
  • Add the black beans, fire roasted tomatoes, and corn to the skillet.
  • Stir everything together and cook over high heat for about 2–3 minutes.
  • Reduce the heat and allow the mixture to simmer for about 5 minutes.
  • Stir in the cooked quinoa until well combined.
  • Before serving, sprinkle shredded cheese on top and allow it to melt slightly.
  • Top with crumbled tortilla chips, salsa, avocado, and fresh cilantro if desired.

Notes

This recipe is very flexible and can be adapted with different toppings like sour cream, diced tomatoes, or shredded lettuce. Brown rice can also replace quinoa if desired.
