Heat olive oil in a large nonstick skillet over medium heat.
Add the diced onion, ground turkey, taco seasoning, and minced garlic to the skillet.
Cook while stirring until the turkey is fully browned and cooked through.
Add the black beans, fire roasted tomatoes, and corn to the skillet.
Stir everything together and cook over high heat for about 2–3 minutes.
Reduce the heat and allow the mixture to simmer for about 5 minutes.
Stir in the cooked quinoa until well combined.
Before serving, sprinkle shredded cheese on top and allow it to melt slightly.
Top with crumbled tortilla chips, salsa, avocado, and fresh cilantro if desired.
