Ground Beef and Sweet Potato Skillet is a hearty one-pan dinner made with lean beef, sweet potatoes, vegetables, and warm spices.

Ingredients
  

  • 1 pound lean ground beef
  • 2 medium sweet potatoes diced
  • 1 medium bell pepper diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the ground beef and cook for 5–7 minutes, breaking it apart until browned. Drain excess fat if necessary.
  • Stir in the chopped onion and minced garlic. Cook for 2–3 minutes until softened and fragrant.
  • Add the diced sweet potatoes and stir well to coat with the seasonings already in the skillet.
  • Sprinkle in the smoked paprika, cumin, salt, and black pepper.
  • Cover the skillet and cook for 10–15 minutes, stirring occasionally, until the sweet potatoes become fork-tender.
  • Add the diced bell pepper during the last 2–3 minutes of cooking so it stays slightly crisp.
  • Remove from the heat and garnish with chopped parsley before serving.
  • This Ground Beef and Sweet Potato Skillet is delicious on its own or served with a fresh green salad, steamed vegetables, or warm bread.

Notes

  • Ground turkey or chicken can replace the beef for a lighter meal.
  • Red or yellow bell peppers work just as well.
  • Fresh thyme or rosemary adds extra flavor.
  • Top with avocado slices or a dollop of plain Greek yogurt before serving.
  • Serve alongside roasted vegetables or brown rice for a more filling dinner.
