Heat the olive oil in a large skillet over medium heat.
Add the ground beef and cook for 5–7 minutes, breaking it apart until browned. Drain excess fat if necessary.
Stir in the chopped onion and minced garlic. Cook for 2–3 minutes until softened and fragrant.
Add the diced sweet potatoes and stir well to coat with the seasonings already in the skillet.
Sprinkle in the smoked paprika, cumin, salt, and black pepper.
Cover the skillet and cook for 10–15 minutes, stirring occasionally, until the sweet potatoes become fork-tender.
Add the diced bell pepper during the last 2–3 minutes of cooking so it stays slightly crisp.
Remove from the heat and garnish with chopped parsley before serving.
