Slice the zucchini on a bias into 1/4–1/2-inch thick slices. Drizzle both sides with avocado oil and season with salt and pepper.
Preheat a grill or grill pan over medium-high heat. Grill zucchini for 4–5 minutes until golden with grill marks. Flip and grill an additional 3–4 minutes. Remove from heat.
Place grilled zucchini slices on the toasted sourdough bread.
Break open the burrata and gently spread it over the zucchini.
Sprinkle with chopped pistachios and drizzle with hot honey.
Serve immediately while warm.
Notes
This toast is best enjoyed fresh. You can double or triple the recipe easily for entertaining. It also pairs well with a simple green salad or fresh fruit.
