Grilled Zucchini and Burrata Toast

Ingredients
  

  • 1 zucchini
  • 1/2 tablespoon avocado oil or other high-heat oil
  • 1 ball burrata cheese
  • Handful of pistachios roughly chopped
  • 1 slice sourdough bread toasted
  • Hot honey to taste
  • Salt and black pepper to taste

Instructions
 

  • Slice the zucchini on a bias into 1/4–1/2-inch thick slices. Drizzle both sides with avocado oil and season with salt and pepper.
  • Preheat a grill or grill pan over medium-high heat. Grill zucchini for 4–5 minutes until golden with grill marks. Flip and grill an additional 3–4 minutes. Remove from heat.
  • Place grilled zucchini slices on the toasted sourdough bread.
  • Break open the burrata and gently spread it over the zucchini.
  • Sprinkle with chopped pistachios and drizzle with hot honey.
  • Serve immediately while warm.

Notes

This toast is best enjoyed fresh. You can double or triple the recipe easily for entertaining. It also pairs well with a simple green salad or fresh fruit.
