Thread the shrimp onto two parallel skewers, alternating the direction of each shrimp so they sit closely together. Refrigerate for 1 hour.

In a small bowl, combine half of the minced garlic with half of the olive oil.
In another larger bowl, whisk together the remaining olive oil, garlic, lemon zest, lemon juice, and chopped parsley. Set aside for serving.
