Ingredients
  

For the Seasoned Breadcrumbs

  • cups day-old bread baguette, Italian loaf, or sourdough, crusts removed
  • 1 tablespoon olive oil
  • teaspoons Old Bay seasoning
  • ¼ teaspoon salt

For the Grilled Shrimp

  • 1 pound medium shrimp peeled and deveined
  • 2 teaspoons olive oil
  • 2 teaspoons Old Bay seasoning
  • teaspoon cayenne pepper optional
  • ¼ teaspoon salt

For the Caesar Salad

  • 1 head romaine lettuce washed, dried, and torn into bite-sized pieces
  • –½ cup Caesar dressing
  • ½ cup freshly grated Parmesan cheese

Optional Garnish

  • Extra grated Parmesan
  • Fresh lemon wedges
  • Fresh cracked black pepper

Instructions
 

Prepare the Breadcrumbs

  • Preheat the oven to 350°F (175°C).
  • Remove the crusts from the bread and tear the bread into small chunks.
  • Pulse the bread in a food processor until coarse crumbs form. Avoid making fine breadcrumbs.
  • Spread the crumbs onto a baking sheet.
  • Drizzle with olive oil and sprinkle with Old Bay seasoning and salt.
  • Toss to coat evenly.
  • Bake for 8–10 minutes until golden brown and crisp. Let cool completely.

Grill the Shrimp

  • Preheat the grill to medium-high heat (450–500°F).
  • Toss the shrimp with olive oil, Old Bay seasoning, cayenne pepper, and salt.
  • Thread the shrimp onto skewers, securing each shrimp through both the body and tail.
  • Grill for about 2 minutes on one side.
  • Flip and cook another 1–2 minutes until the shrimp are pink, opaque, and cooked through.
  • Remove from the grill and set aside.

Assemble the Salad

  • Place the romaine lettuce into a large serving bowl.
  • Add the Caesar dressing and toss until the lettuce is evenly coated.
  • Stir in the freshly grated Parmesan cheese.
  • Divide the salad among serving plates.
  • Sprinkle generously with the homemade seasoned breadcrumbs.
  • Remove the shrimp from the skewers and place them on top of each salad.
  • Finish the Grilled Shrimp Caesar Salad with extra Parmesan, cracked black pepper, or a squeeze of fresh lemon if desired.

Notes

  • Large shrimp may require an additional minute of grilling.
  • Store-bought Caesar dressing works well, but homemade dressing offers richer flavor.
  • The seasoned breadcrumbs can be prepared several days in advance and stored in an airtight container.
  • For a heartier meal, serve with garlic bread or roasted potatoes.
