Ingredients
  

  • pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • ¼ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Lemon wedges for serving

Instructions
 

  • In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper until well combined.
  • Add the chicken pieces to the marinade and toss until evenly coated.
  • Cover and refrigerate for at least 30 minutes. For deeper flavor, marinate for up to 4 hours.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  • Preheat the grill to medium-high heat and lightly oil the grates.
  • Grill the Grilled Lemon Garlic Chicken Skewers for 8–10 minutes, turning every 2–3 minutes until the chicken is golden with light char marks and reaches an internal temperature of 165°F (74°C).
  • Transfer to a serving platter and squeeze fresh lemon juice over the skewers before serving.

Notes

  • This recipe also works on a grill pan or under the oven broiler.
  • Serve with garlic rice, couscous, roasted potatoes, grilled vegetables, or a fresh Greek salad.
  • Leftover chicken is delicious in wraps, salads, or grain bowls.
