In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper until well combined.
Add the chicken pieces to the marinade and toss until evenly coated.
Cover and refrigerate for at least 30 minutes. For deeper flavor, marinate for up to 4 hours.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
Preheat the grill to medium-high heat and lightly oil the grates.
