Avocado Mango Salsa

avocado oil

lime juice

lime zest

cilantro
finely chopped

ripe mango
diced
1
ripe avocado
diced
1/4

finely diced red onion
1/4
cup
finely chopped red pepper

Instructions
Honey Lime Chicken
In a small bowl, whisk together lime juice, lime zest, honey, soy sauce, oil, garlic, salt, pepper, onion powder, and cilantro if using.
Pour the marinade over the chicken. Marinate for at least 2 hours or overnight for best flavor.
Preheat grill to medium-high heat.
Grill chicken for 3–4 minutes per side, or until fully cooked and no longer pink inside.
Let rest for 5 minutes before serving.
Avocado Mango Salsa
In a bowl, mix avocado oil, lime juice, lime zest, and cilantro.
Add diced mango, avocado, red onion, red pepper, and jalapeño.
Season with salt and pepper to taste.
Gently stir to combine without mashing the avocado.
Top the grilled chicken generously with avocado mango salsa and serve immediately.
Notes
Serve over rice, quinoa, or cauliflower rice.
