Ingredients
  

Honey Lime Chicken

  • 2 pounds boneless skinless chicken breasts or thighs
  • 1/4 cup fresh lime juice
  • 2 teaspoons lime zest
  • 1/2 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon avocado oil or olive oil
  • 2 garlic cloves minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 cup cilantro finely chopped (optional)

Avocado Mango Salsa

  • 1 teaspoon avocado oil
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1/4 cup cilantro finely chopped
  • 1 ripe mango diced
  • 1 ripe avocado diced
  • 1/4 cup finely diced red onion
  • 1/4 cup finely chopped red pepper optional
  • 1 tablespoon finely chopped fresh jalapeño optional
  • Fine sea salt and freshly cracked pepper

Instructions
 

Honey Lime Chicken

  • In a small bowl, whisk together lime juice, lime zest, honey, soy sauce, oil, garlic, salt, pepper, onion powder, and cilantro if using.
  • Pour the marinade over the chicken. Marinate for at least 2 hours or overnight for best flavor.
  • Preheat grill to medium-high heat.
  • Grill chicken for 3–4 minutes per side, or until fully cooked and no longer pink inside.
  • Let rest for 5 minutes before serving.

Avocado Mango Salsa

  • In a bowl, mix avocado oil, lime juice, lime zest, and cilantro.
  • Add diced mango, avocado, red onion, red pepper, and jalapeño.
  • Season with salt and pepper to taste.
  • Gently stir to combine without mashing the avocado.
  • Top the grilled chicken generously with avocado mango salsa and serve immediately.

Notes

  • Serve over rice, quinoa, or cauliflower rice.
