For the Sandwich

  • 4 slices thick white bread sourdough or rye work well
  • 4 ounces goat cheese cream cheese or feta can be substituted
  • 2 ounces white cheddar cheese mozzarella or Gruyère also work

For the Sweetness

  • 2 tablespoons liquid honey maple syrup is a great alternative

For the Crunch

  • 2 tablespoons butter mayonnaise can be used instead

For the Heat

  • 1 teaspoon red pepper flakes smoked paprika can be substituted

Instructions
 

  • Melt the butter in a saucepan over medium-low heat and stir in the red pepper flakes. Let the butter infuse for about 5 minutes, then remove from heat.
  • Brush one side of each bread slice with the infused butter.
  • Heat a skillet over medium heat and place one slice of bread buttered-side down.
  • Layer the goat cheese and white cheddar evenly on the bread, then drizzle with 1 tablespoon of honey.
  • Top with another slice of bread, buttered-side up, and cook until golden brown and the cheese melts, about 5–7 minutes.
  • Remove from the skillet, drizzle with the remaining honey, and sprinkle extra red pepper flakes if desired.

Notes
