Garlic Spinach Soup

Ingredients
  

  • 4 cups chicken broth
  • 3 tablespoons grated fresh ginger root
  • 2 cloves garlic minced
  • 1 cup chopped zucchini
  • 2 cups cubed cooked chicken
  • 1 2-ounce package cellophane noodles
  • 4 cups fresh spinach

Instructions
 

  • In a large saucepan, bring chicken broth, grated ginger, and minced garlic to a boil.
  • Reduce heat to medium and simmer for 10 minutes to develop flavor.
  • Add chopped zucchini and cook for another 10 minutes, or until tender.
  • Stir in cooked chicken and cellophane noodles. Cook for about 3 minutes, until the noodles are soft and transparent.
  • Add fresh spinach and stir until wilted.
  • Serve hot and enjoy this comforting Garlic Spinach Soup.

Notes

  • Use low-sodium chicken broth if you prefer more salt control.
