- 4 cups chicken broth
- 3 tablespoons grated fresh ginger root
- 2 cloves garlic minced
- 1 cup chopped zucchini
- 2 cups cubed cooked chicken
- 1 2-ounce package cellophane noodles
- 4 cups fresh spinach
In a large saucepan, bring chicken broth, grated ginger, and minced garlic to a boil.
Reduce heat to medium and simmer for 10 minutes to develop flavor.
Add chopped zucchini and cook for another 10 minutes, or until tender.
Stir in cooked chicken and cellophane noodles. Cook for about 3 minutes, until the noodles are soft and transparent.
Add fresh spinach and stir until wilted.
