Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a shallow bowl, combine parmesan cheese, garlic, salt, pepper, thyme, paprika, parsley, and lemon zest. Mix until evenly blended.
Brush all halibut fillets with olive oil.
Coat each fillet in the parmesan mixture, pressing gently to cover all sides.
Place coated halibut on the prepared baking sheet.
Bake for 5–10 minutes, depending on thickness, until fish flakes easily.
Remove from oven, squeeze lemon juice over the halibut, and serve immediately.
