Heat a large cast-iron skillet over medium heat for 2 minutes.
Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter to the skillet.
Once melted, add the cubed Yukon Gold potatoes.
Season the potatoes with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon black pepper.
Reduce heat to medium-low, cover, and cook for 10–12 minutes, stirring occasionally, until the potatoes are golden brown and fork-tender.
While the potatoes cook, season the steak bites with the remaining garlic powder, salt, and black pepper.
Once the potatoes are cooked, push them to one side of the skillet or temporarily remove them from the pan.
Add the remaining olive oil and garlic herb butter to the empty side of the skillet and increase heat to medium-high.
Add the seasoned steak bites in a single layer.
Sear for 3–4 minutes per side until browned and cooked to your preferred doneness.
If necessary, cook the steak in batches to avoid overcrowding.
Reduce heat to medium-low and add extra garlic herb butter if desired.
Toss the steak bites and potatoes together until evenly coated in the melted garlic butter.
Taste and adjust seasoning as needed.
Serve immediately while hot.
