Garlic Butter Steak Bites and Potatoes is a quick one-skillet dinner made with tender sirloin steak and crispy Yukon Gold potatoes.

Ingredients
  

  • 2 tablespoons olive oil divided
  • 2 tablespoons garlic and herb butter divided
  • 1 pound Yukon Gold potatoes cut into bite-sized cubes
  • 1 pound sirloin steak cut into bite-sized cubes
  • 1 teaspoon salt divided
  • 1 teaspoon black pepper divided
  • 1 teaspoon garlic powder divided

Instructions
 

  • Heat a large cast-iron skillet over medium heat for 2 minutes.
  • Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter to the skillet.
  • Once melted, add the cubed Yukon Gold potatoes.
  • Season the potatoes with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon black pepper.
  • Reduce heat to medium-low, cover, and cook for 10–12 minutes, stirring occasionally, until the potatoes are golden brown and fork-tender.
  • While the potatoes cook, season the steak bites with the remaining garlic powder, salt, and black pepper.
  • Once the potatoes are cooked, push them to one side of the skillet or temporarily remove them from the pan.
  • Add the remaining olive oil and garlic herb butter to the empty side of the skillet and increase heat to medium-high.
  • Add the seasoned steak bites in a single layer.
  • Sear for 3–4 minutes per side until browned and cooked to your preferred doneness.
  • If necessary, cook the steak in batches to avoid overcrowding.
  • Reduce heat to medium-low and add extra garlic herb butter if desired.
  • Toss the steak bites and potatoes together until evenly coated in the melted garlic butter.
  • Taste and adjust seasoning as needed.
  • Serve immediately while hot.

Notes

  • Ribeye or New York strip steak can be substituted for sirloin.
  • Add mushrooms, green beans, or asparagus for extra vegetables.
  • Garlic herb butter can be replaced with regular butter and minced garlic.
  • Serve with a simple green salad for a complete meal.
