Heat a large cast iron skillet over medium heat for 2–3 minutes.
Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter to the skillet.
Once the butter melts, add the potatoes. Season with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper.
Reduce heat to medium-low, cover, and cook for 10–12 minutes, stirring occasionally, until potatoes are fork-tender and lightly golden.
While the potatoes cook, season the steak with the remaining ½ teaspoon salt, ½ teaspoon pepper, and ½ teaspoon garlic powder.
Push the potatoes to one side of the skillet or remove them temporarily to prevent burning.
Add the remaining olive oil and garlic butter to the empty side of the skillet and increase heat to medium-high.
Add the steak bites and sear for 3–4 minutes per side until browned and cooked to your preferred doneness. Cook in batches if needed.
Reduce heat to medium-low. Add extra garlic butter if desired and return potatoes to the skillet.
Toss everything together until evenly coated in garlic butter. Taste and adjust seasoning, then serve hot.
