Ingredients

  • - 1 1/4 pounds boneless skinless chicken breasts, cut into 1 1/4-inch pieces
  • - 2 tablespoons all-purpose flour
  • - 1 1/2 teaspoons Italian seasoning
  • - 3/4 teaspoon salt or to taste
  • - 1/2 teaspoon freshly ground black pepper or to taste
  • - 1 tablespoon olive oil
  • - 3 tablespoons unsalted butter divided
  • - 4 garlic cloves finely minced
  • - 2 tablespoons finely chopped fresh parsley

Instructions

  • Heat a large 12-inch nonstick skillet over medium-high heat.
  • Pat the chicken pieces dry thoroughly with paper towels. Removing excess moisture will help them brown instead of steam.
  • Place the chicken in a bowl and sprinkle with the flour, Italian seasoning, salt, and black pepper. Toss until every piece is lightly and evenly coated.
  • Add the olive oil and 1 tablespoon of butter to the hot skillet. Swirl the pan so the melted butter and oil evenly coat the cooking surface.
  • Arrange the chicken pieces in a single layer, leaving a little room between them. Cook for about 3 minutes without moving them, until the bottoms are golden brown.
  • Turn the chicken pieces over and cook for another 2 minutes, or until they are almost completely cooked through.
  • Reduce the heat slightly. Add the remaining 2 tablespoons of butter, minced garlic, and chopped parsley.
  • Cook the Garlic Butter Chicken Bites for about 1 additional minute, gently tossing them in the melted garlic butter until fragrant and fully coated.
  • Check that the thickest pieces have reached an internal temperature of 165°F (74°C). Remove from the heat and serve immediately.

Notes

Boneless, skinless chicken thighs can replace chicken breasts. Because thighs may take slightly longer to cook, always check their internal temperature before serving.
For a gluten-free variation, replace the all-purpose flour with a suitable gluten-free all-purpose flour blend or cornstarch.
These quick chicken breast bites pair especially well with steamed rice, mashed potatoes, pasta, couscous, roasted vegetables, green beans, broccoli, or a crisp garden salad.
