Garlic Butter Chicken and Potato Skillet

Garlic butter chicken and potato skillet is a one-pan meal made with tender chicken and crispy potatoes.

Ingredients
  

  • ½ Tablespoon olive oil
  • 1 pound baby potatoes cut into bite-size pieces
  • ¼ cup water
  • 4 tablespoons vegan butter
  • 1 ½ – 2 pounds boneless skinless chicken breasts cut into 1-inch pieces
  • 6 cloves garlic minced
  • ½ teaspoon Italian seasoning
  • 1 teaspoon kosher salt divided
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley finely chopped

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add potatoes and ½ teaspoon salt. Cook for 5 minutes until slightly browned.
  • Pour in water, cover, and reduce heat to medium-low. Cook 5–10 minutes until fork-tender. Remove and set aside.
  • In the same skillet, melt vegan butter over medium heat.
  • Add chicken, garlic, and Italian seasoning. Sprinkle remaining salt and black pepper. Cook for about 7 minutes until fully cooked.
  • Return potatoes to the skillet and mix well. Cook for 1–2 minutes until heated through.
  • Stir in parsley and serve immediately.
