Heat olive oil in a large skillet over medium heat.
Add potatoes and ½ teaspoon salt. Cook for 5 minutes until slightly browned.
Pour in water, cover, and reduce heat to medium-low. Cook 5–10 minutes until fork-tender. Remove and set aside.
In the same skillet, melt vegan butter over medium heat.
Add chicken, garlic, and Italian seasoning. Sprinkle remaining salt and black pepper. Cook for about 7 minutes until fully cooked.
Return potatoes to the skillet and mix well. Cook for 1–2 minutes until heated through.
Stir in parsley and serve immediately.
