Frozen Chocolate Covered Strawberries

Frozen Chocolate Covered Strawberries are fresh strawberry bites coated in white and dark chocolate.

Ingredients
  

  • 1 pint fresh strawberries
  • cups white chocolate chips
  • cups dark chocolate chips
  • 2 tablespoons refined coconut oil divided

Instructions
 

  • Wash the strawberries thoroughly and place them on a clean kitchen towel to dry completely.
  • Remove the stems and slice each strawberry in half lengthwise.
  • Line a baking sheet or tray with parchment paper or wax paper.
  • In a microwave-safe bowl, combine the white chocolate chips and 1 tablespoon coconut oil.
  • Microwave in 30-second intervals, stirring between each interval, until smooth and fully melted.
  • Using a fork, dip each strawberry half into the white chocolate until completely coated.
  • Allow excess chocolate to drip off and place the strawberries on the prepared baking sheet.
  • Freeze for 15 minutes.
  • In a separate microwave-safe bowl, combine the dark chocolate chips and remaining coconut oil.
  • Microwave in 30-second intervals, stirring until smooth.
  • Remove the strawberries from the freezer.
  • Dip each white chocolate-coated strawberry into the dark chocolate until fully covered.
  • Return the strawberries to the baking sheet.
  • Freeze for another 15 minutes or until completely set.
  • Transfer the Frozen Chocolate Covered Strawberries to an airtight container and store in the freezer.

Notes

  • Refined coconut oil provides a neutral flavor.
  • Semi-sweet chocolate can be substituted for dark chocolate.
  • Store in a freezer-safe container with parchment paper between layers.
  • Fresh strawberries provide the best texture.
