For the French Toast
- 8 thick slices brioche or challah bread
- Fresh strawberries hulled and sliced
- 1 tablespoon unsalted butter
For the Creamy Filling
- 1 cup ricotta cheese
- 4 ounces cream cheese softened
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
For the Custard
- 4 large eggs
- 1 cup whole milk or half-and-half
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt

- Maple syrup
- Powdered sugar
- Whipped cream
- Fresh strawberries
Prepare the Filling
In a medium bowl, combine ricotta cheese, softened cream cheese, vanilla extract, and powdered sugar.
Mix until smooth and creamy.
If needed, add a small splash of milk for a smoother consistency.
Set aside.
Stuff the Bread
Using a small knife, carefully cut a pocket into the side of each bread slice.
Fill each pocket with approximately 2 tablespoons of the creamy filling.
Add several strawberry slices inside each pocket.
Gently press the bread closed.
Make the Custard
In a large bowl, whisk together eggs, milk, sugar, cinnamon, vanilla extract, and salt.
Mix until fully combined.
Cook the French Toast

Coat both sides for 15–20 seconds.
Avoid over-soaking to prevent soggy bread.
Place the slices in the skillet.
Cook for 3–4 minutes per side until golden brown.
Repeat with remaining slices, adding more butter as needed.
Serve
