  • 8 thick slices brioche or challah bread
  • 1 cup ricotta cheese
  • 4 oz cream cheese softened
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar
  • 4 large eggs
  • 1 cup whole milk or half-and-half
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • Pinch of salt
  • Fresh strawberries hulled and sliced
  • 1 tbsp unsalted butter
  • Maple syrup
  • Powdered sugar
  • Whipped cream
  • Extra sliced strawberries

Instructions
 

  • In a medium bowl, mix ricotta cheese, cream cheese, vanilla extract, and powdered sugar until smooth and creamy. Add a splash of milk if needed.
  • Using a paring knife, carefully cut a pocket into each bread slice without cutting all the way through.
  • Fill each bread pocket with about 2 tablespoons of the creamy filling and several slices of fresh strawberries.
  • In a large bowl, whisk together eggs, milk, granulated sugar, cinnamon, vanilla extract, and salt until fully combined.
  • Heat a non-stick skillet over medium heat and melt butter evenly across the surface.
  • Dip each stuffed bread slice into the custard mixture for about 15 to 20 seconds per side. Avoid over-soaking.
  • Place the soaked bread slices onto the hot skillet and cook for 3 to 4 minutes per side until golden brown and slightly crisp.
  • Continue cooking remaining slices, adding more butter as needed.
