Ingredients
  

Wet Ingredients

  • 1 cup mashed ripe bananas
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 egg optional

Dry Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions
 

  • In a large mixing bowl, combine the mashed bananas, milk, vanilla extract, and egg if using.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients into the wet mixture. Stir gently until just combined. Avoid overmixing to keep the pancake bites fluffy.
  • Heat a non-stick skillet over medium heat and lightly grease if needed.
  • Spoon small portions of batter onto the skillet to create mini pancakes.
  • Cook the Fluffy Banana Pancake Bites until bubbles appear on the surface and the edges begin to set.
  • Flip carefully and cook the other side until golden brown.
  • Serve warm with maple syrup, sliced bananas, berries, or nut butter.
