- 1 deep dish pie crust from a 12 oz package, frozen, thawed
- 1/2 cup chive-and-onion cream cheese spread
- 4 large eggs
- 12 oz cooked shrimp peeled, deveined, and chopped
- 1/2 cup shredded pepper Jack cheese
Preheat oven to 375°F (190°C). Allow pie crust to thaw for 10–20 minutes. Prick the bottom with a fork and pre-bake for 9–11 minutes.
In a mixing bowl, beat the cream cheese until smooth.
Add eggs one at a time, mixing well after each addition.
Gently fold in chopped shrimp and shredded pepper Jack cheese.
Pour mixture into the pre-baked pie crust.
Bake for 30–35 minutes, or until the center is set.
Let the shrimp pie rest for 15 minutes before slicing. Serve warm.
