- 1 cup cottage cheese 4% or low-fat
- ½ cup shredded sharp cheddar cheese
- ¼ teaspoon fine salt
- Pinch of freshly ground black pepper
- Fresh chives roughly chopped
Preheat your oven to 350°F (175°C). Lightly coat a silicone muffin pan with cooking spray.
Add the eggs, cottage cheese, shredded cheddar, salt, and black pepper to a blender.
Blend until completely smooth and creamy.
Divide the egg mixture evenly among the muffin cups, filling each about halfway.
Sprinkle chopped fresh chives over each egg bite.
If desired, add optional mix-ins such as diced bell peppers, spinach, mushrooms, onions, or cooked turkey bacon.
Bake the Egg Bites with Cottage Cheese for 20–22 minutes, or until the centers are just set and lightly firm.
Remove from the oven and allow the egg bites to cool for several minutes. They will puff up during baking and settle slightly as they cool.
Carefully remove from the muffin pan and serve warm or allow them to cool completely for meal prep.
- Low-fat cottage cheese works just as well.
- Substitute Monterey Jack, mozzarella, Swiss, or pepper jack cheese.
