Egg Bites with Cottage Cheese are fluffy, protein-packed breakfast bites made with eggs, cheddar, and cottage cheese.

Ingredients
  

  • Cooking spray
  • 8 large eggs
  • 1 cup cottage cheese 4% or low-fat
  • ½ cup shredded sharp cheddar cheese
  • ¼ teaspoon fine salt
  • Pinch of black pepper
  • Fresh chives roughly chopped

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Lightly coat a silicone muffin pan with cooking spray.
  • Add the eggs, cottage cheese, shredded cheddar cheese, salt, and black pepper to a blender.
  • Blend until the mixture is completely smooth and creamy.
  • Pour the egg mixture evenly into the muffin cups, filling each about halfway.
  • Sprinkle chopped fresh chives over each cup.
  • If desired, add additional mix-ins such as diced vegetables, turkey ham, beef sausage, spinach, mushrooms, or peppers.
  • Bake for 20–22 minutes, or until the centers are lightly firm when touched.
  • Remove the pan from the oven.
  • The egg bites will puff up while baking and naturally settle as they cool.
  • Let them rest for 3–5 minutes before removing from the pan.
  • Serve warm or store for later meal prep

Notes

  • Full-fat cottage cheese produces the creamiest texture.
  • Sharp cheddar adds rich flavor, but mozzarella or Monterey Jack work well too.
  • Chives can be replaced with green onions or parsley.
  • These egg bites are ideal for meal prep and busy weekdays.
  • For extra protein, add cooked turkey ham or beef sausage.
