Preheat your oven to 350°F (175°C).
Lightly coat a silicone muffin pan with cooking spray.
Add the eggs, cottage cheese, shredded cheddar cheese, salt, and black pepper to a blender.
Blend until the mixture is completely smooth and creamy.
Pour the egg mixture evenly into the muffin cups, filling each about halfway.
Sprinkle chopped fresh chives over each cup.
If desired, add additional mix-ins such as diced vegetables, turkey ham, beef sausage, spinach, mushrooms, or peppers.
Bake for 20–22 minutes, or until the centers are lightly firm when touched.
Remove the pan from the oven.
The egg bites will puff up while baking and naturally settle as they cool.
Let them rest for 3–5 minutes before removing from the pan.
